Hwangtae is the dried Alaska Pollock.

The process of drying involves freezing & drying couple of times in the cold winter season which produces a more intense flavor and dark yellow color and hence the name 'hwang' means 'yellow'.

It is good to use for a braising or stir-frying with chili sauce as well as shredded by hand dipping a chili-mayo as a snack.
